Portuguese-Style Peas with Chorizo and Eggs

There are dishes that require a lot of work and/or a lot of ingredients to make. Then there is this one that is simple, with few ( but good ) ingredients and tastes really good. The story is not certain how it was created but sure someone with a fridge half empty come creative. Its been told that it comes from the Estremadura province along the Atlantic Ocean in the center of the country and where Lisbon is included.

The recipe has 3 heroes all equally reparted : peas, eggs and the good iberico portuguese chorizo.


Serves 4:

Preheat the oven to 175º.

Add the oil to a Dutch oven or some iron cast.When the oil is hot add the onion and garlic and the bay leaf till the onion is soft but not brown.Add the tomatoes diced and the paste and cook, stirring from time to time. Let the tomatoes start to sizzling and add the chorizo and a little bit more olive oil. Let it cook  some minutes till the chorizo start looking cooked and add the peas and discard the bay leaf.

Make four nests in the mixture with some space apart. Break a egg into each nest. Put the pan in the oven for around 8 minutes for still running yolk.

Take it from the oven add the parsley and a little bit of lemon juice and serve right away.
