Iberico pork ribs with organic rice and tomato

What can be better than pork ribs? Iberico pork ribs of course. On top of that a tomato organic rice as a side.Iberico pork besides is free range, feeded mostly with acorn that his full in oleic acid that is a monounsaturated fat acid also presented in olive oil is has a amazing taste different from any type of meat. On top of that we also had our own portuguese tomato rice, made from organic rice from Portugal.


  • 1 Kg iberico pork ribs
  • 1 teaspoon Paprika powder
  • 6 Cloves of garlic minced
  • Springs of rosemary
  • 1 dl white wine
  • 1 red chilli
  • Olive oil
  • 250 gr organic rice
  • 4 ripe tomatoes diced
  • 1 onion diced
  • Parsley
  • Salt and Peper


Season the ribs with the paprika powder, garlic, rosemary, wine and chilli and salt. Let it seasoning for 3 to 4 hours even better if you can leave it over the night.

Set the oven for 200º and drizzle with olive oil the ribs before put them in a tray and put them in the oven.

For the rice; Sautée the onion in olive oil for a couple of minutes or till the onion is soft. Add the tomatoes and let it simmer for a little bit longe. Add the rice and 2 cups of water of vegetable stock.Let it cook till the rice is ready. Chop the parsley and add it to the rice as soon as it ready.

Take the ribs from the oven and add a little bit more springs of rosemary on top.
