Honey and cinnamon cake with honey creme fraiche icing

Portugal, specially the Madeira region has a tradition of a honey cake.This one was added a twist with the icing on top. The orange tree honey is the hero of this dessert.

For the cake:

  • 1 egg
  • 1 cup of sugar
  • 3 table spoons of orange tree honey Quinta Jugais
  • 1 table spoon of butter
  • 2 cups of flour
  • 1 tea spoon of cinnamon
  • 2 teaspoons of baking powder
  • 1 milk cup

 For the icing:

  • 100 gr crème cheese
  • 100 gr crème fraiche
  • 50 gr butter
  • 150 gr icing sugar
  • ½ tsp cinnamon
  • 1 Table spoon of orange tree honey honey Quinta Jugais

 

 

Mix the egg with the sugar and the honey till it make a cream

Add the butter and mix till it blends well.

Add the milk and the flour with the cinnamon and baking powder. Mix it really good and when it’s done add it to a coffee cake pan.

Put it on a pre heated oven on 180º for 40 minutes.

Meanwhile for the icing, mix all the ingredients well till they are well blended.

When the cake is cooked, take it from the oven and let it rest. Add the icing sugar and let it set. Sprinkle with honey and cinnamon and it's ready to eat
