Cornbread with cherry and ginger jam

One of the tradicional Portuguese breads is the corn bread that one day we will show it here.

Today we make also a corn bread, but with a twist because it's with our amazing cheery and ginger jam.

Simple and delicious.


  • 170 gr butter
  • 1 cup milk
  • 3 eggs
  • 185 gr flour
  • 185 gr corn flour
  • 50 gr sugar
  • 2 teaspoons of baking soda
  • 2 teaspoons salt
  • 225 gr cherry and ginger jam Quinta Jugais

Pre heat the oven in 220º degress. Put the butter in a Dutch pan, and put it in the oven (with lid) for around 6 minutes till the butter melts but not burn.

Meanwhile in a small bowl mix the eggs with the milk and in a big bowl mix the flours, baking soda, salt and sugar.

Coat the bottom of the pan with the butter and as well a little bit of the sides.Reserve the butter to a cup.

Add the egg mixture to the flour mixture and as well the butter mixture. Mix it well.

Add the mixture to the Dutch pan and put it in the oven for 12 minutes(with lid) till the edges start to cook.Take it out and add the jam in small balls or dots. Back to the oven(with lid) for 15-20 minutes or till it's cooks.

Take the lid of and let it cool. Ready to serve. It's Good Stuff.
