Codfish with potatoes in wooden oven

Besides the fact that Portugal is a small country, every region has their own dishes and cultural traditions, sometimes so different that it seems that you moved from different countries. But if there is one dish that exists in every region and it’s called the loyal friend is the codfish. No matter where you are in Portugal codfish is always in the restaurants or in the regions traditions.


Yes it’s true that there are dishes of codfish that ” belong ” more to a region than to other but there is so many codfish recipes ( there is even a cooking book of one 365 recipes of codfish) that makes it difficult to have all the same recipes in all the regions.

But this one is special for many reasons. First no matter where you go in Portugal, we have this dish there. Second is one of the most eaten in Christmas. Third because is so easy to do. Fourth because is really Good Stuff;)


Makes 4:


  • 4 Pieces of Codfish ( from the loin is better)
  • 16 potatoes with peel
  • 2 onions sliced
  • 1 garlic head sliced
  • Black olives
  • Extra virgin olive oil Fadista
  • salt and pepper


If your codfish is still salted, put it on cold water, changing the water 2 a 3 times a day during 2 days.

Set the oven for 180º.

Put the potatoes to boil during 20 min in cold water.Take them from the water and let them rest.

In the meanwhile, in a tray put the onions and add the olive oil.Add the codfish to the tray.

In that time the potatoes must be good to handle. Punch them with your hand but in a way that they still keep it shape, just a little bit…moshed.

Add them to the tray and add the garlic and a good portion of olive oil on top. The olives you can add them to the tray or after it’s done.I prefer to add them before.

Put it in the oven for 40 minutes or till the skin of the codfish is cooked and crispy.

Normally it’s served with boiled greens.
